At ely, we know that there is great pleasure to be had in eating and drinking according to the cycle of nature. With wine, this comes almost naturally, when a warm summer's day makes us automatically reach for a crisp Sancerre before a rich Burgundy. With food, however, it's not always so simple.

Eating according to the seasons, wherever possible, takes better care of the planet, but it’s also the healthiest way to live. Fruit and vegetables grown locally - especially organically - retain their goodness in a way their long-travelled, companions can never aspire to.

By following the flow of the seasons and eating according to what is naturally and locally available, we'll be doing what’s best for the environment, and taking good care of ourselves.
